I’ve had chicken salad on my mind for several days now, so tonight I got the bright idea to finally give in to my craving. This is not the normal chicken salad however- it’s chicken salad on steroids! lol
For this Chicken Salad recipe I used:
6 chicken breast tenders, boiled in salted water
6 pieces of bacon, broken into pieces
1/3 cup shredded cheddar cheese
chopped green onions (I used about 1/8 cup, but it’s really all about preference)
2 T mayo
Salt and Pepper to taste
Boil the chicken until fully done; while the chicken is boiling cook the bacon. I cooked my bacon in the microwave with a bacon cooker- nice and crispy! When the bacon has cooled enough, crumble or cut into small pieces. Shred the drained and cooled chicken with a mixer, then add the bacon, shredded cheese, green onions and mayo. Stir together with a fork until everything is evenly mixed.
I decided this chicken salad deserved to be wrapped, after all it is a gift to my taste buds 😉 so I took a low carb flour tortilla (Mission brand, 6 net carbs, found at Walmart Neighborhood Market) and made a wrap out of it!
I spread a little mayo on the tortilla (about 3/4 teaspoon), added a little baby spinach and topped it with the chicken salad. This was the BEST chicken salad “sandwich” I have ever had! And the best part is…even with the flour tortilla, it is only 9 carbs! The chicken salad alone is only 3 carbs. Either way, I will definitely have this again! It was deeeelish! 🙂
