Today I’m 13 days into serious Keto and needing a sweet fix in a major way. And not just any sweet fix- a chocolate sweet fix. So I got the bright idea to do a little altering on the 90 Second Bread recipe. (I have no idea where this recipe originated but kudos and credits to the original chef!!) Husband and picky kid approved 👍🏻
This is the fruit of my labor- and yes the third time was a charm!
3 T blanched almond flour
1/2 tsp baking powder
2 T softened salted butter
2/3 cup sweetener (I used dry Stevia)
2 T unsweetened cocoa
1 tsp pure vanilla extract
“Scramble” the egg with a fork then add all other ingredients and mix gently until it looks like a cake batter. Pour into microwave safe bowl (I use a small round disposable Glad bowl, about the size of a bun!) and microwave for 90 seconds. Remove and dump onto plate.
Allow it to cool then top with whatever floats your boat, or dive right in butt naked like I did. Either way, enjoy!
